Ethical Eating

UUFNN can develop effective strategies to address two of the world's biggest problems: social inequality and environmental destruction. Hunger is both a community problem and an international problem . There is a need for involvement with service programs that deliver food to individuals and families as well as supporting local, and sustainable agriculture.

Mama Luann's Zucchini Circles

 

 

 

2-3 Zucchini, medium size
Salt
Pepper
Basil, dried
Garlic Powder
Brewers Yeast
Olive Oil

Preheat oven to 425 degrees.
Slice the zucchini thinly, 1/4 inch or less.
Coat lightly in olive oil.
Lay out side by side on a baking sheet.
Sprinkle with the spices and brewers yeast to your desired level of seasoning. (We like it average on the spices and heavy on the brewers yeast).
Place in oven for 20-30 min depending on your oven. The circles should be slightly browned, not burned.

Note: the use of parchment paper on the baking sheets can be very helpful to avoid sticking. Also it can help the browning process to flip the circles half way thru to ensure more even browning.
